I don't mean white espresso either...

And I blame Dr Oz (for many things...)

So my GF heard that Green Coffee contains chlorogenic acid, which recent studies have shown to aid in weight loss.  SO we bought some green coffee at the local roasters.

I'm just entering the world of real (non-starbuck) espresso and haven't gotten to the roasting stage so these diamond hard little gems were new to me.

She wanted them ground to just take like a supplement, as I'm sure most already know, the little buggers jammed my Encore instantly (no harm I stopped right away).

I was able to crack them with a bar coffee/spice grinder, but not into a fine powder.   On a whim I thought I'd try brewing a shot with them.  Since they were course and uneven I used the pressurized single filter.

The results weer... interesting.  It pulled fast and delivered a light greenish brew with a bit of crema like-ness (maybe just from the pressurized filter).  It tasted less horrible than I expected and she actually liked it (but then she likes wheatgrass shots, which it reminded me of).


Has anyone else tried this?  Does anyone have any suggestions for grinding green beans?  

Does anyone know how hot beans get during roasting?  This acid is supposed to be stable to 464 degrees F.  Do they get that hot? Really?

We may try the popcorn popper roasting method and monitor the temp to see of we can get white espresso with exceeding that temp...   Anyone ever played with white espresso?

I can't say that I've ever tried espresso pulled from greens.  It will be much harder to actually dissolve solubles from a green coffee bean, the cell structure is still too tight before roasting.  Roasting isn't just cooking, there are a lot of chemical and physical changes going on, and the bean becomes porous.

Arabica beans start with about 7.1% CA, Robusta 10.3%.  With roasting, you lose 1/3 - 1/2.  CA is water soluble, and reached its max extraction at about 200 F in about 10 minutes.  With a green espresso shot, you're barely getting anything out.

You could grind extremely fine and make Turkish coffee.  It would be terrible, but it should extract some CA.  Or just drink more coffee.

Roasting temps range from 420-450f, but the coffee will turn pale around 250f, if that's what you're going for.  Sweet Marias has a nice roasting temp guide.

The depth of coffee knowledge on on this site astounds me.

From what you're saying, black coffee still has a fair amount of CA in it?  Interesting.  I guess if you were to extract CA commercially though, it would only make sense to process green beans if you're able due to the higher concentration.

I think we'll try grinding as fine as we're able and boiling it for 10 minutes, from what you say.  It's gonna taste awful regardless - may as well try and maximize the extracted %.  

To be honest, I think she actually likes horrible tasting things that are good for her...

Not to get too personal, but does she, by any chance, like "high colonics"?  ; )
I always figured they appealed to people precisley because they're a bit disgusting.

So, did you track down the research to find out how much of this stuff you need to consume to have a useful effect?

(...and then figure out that it's much easier to just go for a longer walk or eat less? ;) )

Link to an article in the American Journal of Clinical Nutrition which claims that this may increase risk of cardiovascular disease (yet to be proven)  nonetheless, an interesting read.
