Looking for some input. I've always bought and used preblended espresso green beans. I've recently bought a sample pack from Sweet Marias. I only have 4 different kinds but am wondering if I could blend any of these for espresso to be used in a latte. I have on hand: Sumatra Mandeling Gr. 1, Mexican Chiapas Strictly Altura, Costa Rican Auction Lot - Diamante Tarrazu, and Indian Peaberry.

Lattes filter out acidity and origin flavors, so the Terrazu won't show up at all there. Some Mexican Typicas have a good roast flavor, so you could give that a try; but generally, Mexican coffees are also too light for lattes.
The standouts are the Mandheling and the Indian Peaberry. You'll need to roast them separately, since the Peaberry is a very fast roaster, and the Mandheling very slow. Take them both at least to a rolling second, so the beans are milk chocolate brown and oil covered in the roaster (they'll dry out on cooling for a few days). You can go further if you want. The Peaberry will give a spice taste, the Mandheling a smoky one, both of which cut through milk extremely well.
