I was thinking this morning, as i was eating my cereal with honey about the many varieties of honey there are. Now i'm wanting to experiment with different types of honey in coffee, i was wondering if anyone has any tips on this?
Also i'm looking for a honey and coffee drink? One with few ingredient but keeps all the flavours......other than the obvious, Any ideas?
Since it's still Summer up there, how about a honey affogato? Simply line your (not too large) glass with honey, fill with vanilla gelato, then drown it in espresso by pouring a freshly pulled doppio over the top. Stir with a spoon and enjoy - delicious. You could vary this by using coffee gelato or, my favourite, a bit of dry marsala. Wiping the rim with an orange segment is also nice. Try it without the honey as well, in the traditional way - although then it wouldn't be a honey drink...
Also, experiment with the type of honey you use, since this has a trmendous effect on the taste. You can get great honey in the UK - I remember heather honey was nice. I like Tasmanian leatherwood myself, as it has a darker flavour, less overtly floral, but is too strong for some. It shouldn't be just sweet. Tell us what you come up with.

One of the USBC past champs, Bronwen Serna, won with a honey macchiato as her signature drink. I remember reading that she tried out many different honeys before settling on one, as she was looking for just the right flavour.

Those are the type of ideas i wanted, i like the idea of honey, vanilla and orange all together, preferably if they were all fresh and pure to some extent. I'm sure this little project will keep me occupied for a while. Will let you know my results
