In our understanding, the most traditional coffee drinks from Italy are quite great enough for people to enjoy them. So, we never make midification for them, and present them as they should be in Italy, including the glass for caffe latte.
Most people would make more choices as in *$s, from small, medium and grande. I never believe that it is necessary. Those few kinds of coffee drinks as one can see in cafes in Italy can be enough for most clients' expect and satisfaction. It seems that it works. How is it for you?
Concerning about the customers bases, it is not a problem at all, because most people are learning from the cafes about the espresso coffee drinks. They are to be educated, not require yet, as in China.
