you have a great grinder.  was it bought used?

then how old are the burrs?  how many lbs. through  you have NO way of knowing.  replace them ($40 or $50)

and the machines you are using esp. the lever make it difficult to make good shots  -- due to overheating and other WILD temperature swings.

If you want to step up from Silvia then you should go for an Oscar or a Pulser (if you don't want to spend a ton for an HX). Used models are not the easiest to find but they are out there.

As for the first question, technique is the most important thing. A good machine will make everything easier, however.
