I have landed a proposal in a State Building with 350 employees and foot traffic. Also, across the parking lot is another state building with employees that come over to eat lunch where I will have my cart. There is NO competition for blocks around. I am trying to figure out how to judge how many drinks a day I can expect to sell Any help out there>>> Sharon

With a new cart business my thought is that repeat business will be 80 percent or more. The trick is to get 200 a day at 80 percent instead of 50 a day at 80 percent repeat business. Initial presense will be a big deal. Word passes quickly. Great coffee drinks served fast will be a big draw. Signature your beverage and food and keep it the same day in and day out. Try when starting by offering free or at cost beverages. Leave coupons and flyers at every business for half off and specials. So be prepared to serve a lot of coffee.
