if i'm not mistaken the real coffee luwak should be naturally eaten by the civet, i mean the civet will pick only the ripest berry and this can only be done if you have a coffee plantation and every day you have to walk around to find the poop. if you only feed the civet and waited for it to poop than you will produce low quality coffee beans because the civet got no chance to pick their own berry. here in indonesia civet coffee that produced by feeding the civet have a low price and hard to sell, and it is considered to be fake luwak coffee.

Bel Canto is right to a degree, but remember "all catshit coffee is good coffee" (--Emile Yorborg).

We've been through the whole thing here, too; we have 34 males and 161 females in our trailer park. In the end, temperature and pressure turn out to be the big variables (just like with an espresso machine) so we're working on PID'ng one of the young males we have here, and trying to get Chris at Chris Coffee to help with modifying a few of the animals to 20 amp (and maybe getting a plumbed-in option).

We'll let you know!

Even Tom (Sweet Marias) jokes about the "poop" coffee, but they do sell it for those "adventurous" types.  Does this feline only eat the ripe beans like the Jacu bird?

The answer to that is Yes they only eat the ripe cherries.  Actually most if not all herbivores will eat just the ripe fruits of a particular plant.  

In fact there have been documented cases of Yaks competing for the ripe cherries in the asian regions generally populated with Civets.  While the Yaks do have quite a liking for the coffee cherries, they also have an issue with getting to the top of the coffee trees.  Some villagers have described entire groves of trees snapped in half due to the weight of a Yak (males can reach 1 ton) trying to get to the top of the trees for the ripened fruit.

They are hard to catch in the act, however, due to an evolved "chameleon-like" ability to blend in with the surrounding foliage.  One lucky resident was able to take a picture of a Yak grazing on the ripe berries near the top of a coffee tree, as indicated below.  No small feat as these creatures are easily startled.

An Other way of acquiring Kopi Luwak is to farm Luwak. This method allows for cheaper but lower quality Kopi Luwak.

The negative points is the cage luwak/civet are force to eat cherries selected by farmer not by its own instict.

Luwak is a carnivora animal , its a picky animal , its only eat a best riped coffee cheries. if you let the luwak/civet hungry and force this cats eat the coffee cheries, so you just wasted your time and you will not ever try an original luwak kopi taste.

Oh i am forgot after you get a wet pooh you still have to wait this pooh is dried by jungle soil.

So the enzym of luwak is only part 1 of all process of kopi luwak Cofffee beans.
