Subject: Vacume seal beans or not?
 

Hey gang,

I got a quick question for you. When I get my beans from Vivace they are not vacume sealed but, they do have the vacume seal hole in the bag and I found out that with a little suction you can vacume seal the bag yourself. Now, I am wondering if this is a good idea or not? should I just leave them in an air tight container or vacume seal them instead? I don't know? do they need some air or not? what do you think? just let me know and thanks in advance.

Eric,

The one way valve is there to vent co2 which is given off by freshly roasted beans. Without it, the gas pressure might pop the bag open exposing your beans to staling O2. Some roasters use them and some don't.

At work we use the vacuum sealed barrels from Illy.  They seem to do a great job of keeping beans fresh, given that they're coming from Italy and all.  As brokencup said, freshly roasted beans will give off C02 which is why that little hole is there.  

Personally I would trust a company like Vivace to do what is best for the coffee.

I can only image their worth. Here in Atlanta we pay $22US a pound for Illy.

I can't tell you how much they cost us as I'm not privy to such information.  However my best guess would be about $50 CDN  per kilo, given our prices and usual markups.  It ain't cheap that's for sure!  Nice, reliable espresso though.

Can't tell from your post how long you are storing the beans.  The oft repeated guideline is if you will use them in 7-10 days then an airtight container kept in the dark is fine.  If you'll be keeping them much longer then many folks use vacuum and freezing, which works well for me.

To answer your question "do they need air", the answer is definitely not.  Air is the enemy of fresh.

When I open a new can of Illy, or bring some home from another source, I pour enough beans for a few days into my grinder's hopper and whatever's left gets vacuum sealed in a mason jar.  Since I've been doing this, no more stale tasting espresso.  My little home vacu-seal has proven to be useful once again!

Thanx gang! it sound's like I got it right. I got through about a pound every 2 weeks or so and only load up what a few days worth in the hopper of my Rocky and keep the rest in the original bag sealed tight in the cupboard. So I will just keep on wiht this method as it seems to give me the freshest espresso:-)
