I am new to all of this and have a question about how the grounds should look after brewing in the portafilter. I am using a Starbuck Barista Athena and the grounds have to be cut out with a small sharp knife after I pull the 2 shots. Is this normal or should they pop out when struck in the trash? If they should pop out, what could be causing them to be so solid? Thanks for your help.

Just trying to understand, you are saying you use the same grinds for 2 shots of coffee and when you pull the grinds out of the portafilter it is dry on the inside?

Let us know how you are doing. I would not pull two shots of coffee on the same set of grinds. A knock box is nice to have. I got a pro one off craigslist for little of nothing with some extra pitchers and a thermometer.
