Does anyone know the average wage for a skilled, certified Barista? Someone that knows coffee extremely well, can make latte art in a breeze, and is able to make many drinks per hour.

Totally depends on the caliber of the company and the market . . . and if assistant or store management duties tacked on.
That said, over $10 + tips is not unreasonable. Tips depend on customer loyalty, foot traffic, local culture, barista winsomeness, attentiveness, and skill. Tips could be as low as $7 per shift per barista and, depending on the factors above, upwards of $40+ per shift.
I, as a former store manager at another company, sat with Marcus Boni outside Intelligentsia's newly-opened Silver Lake store as he entertained a very ambitious wage request. This was a second interview after I had met with the newly-appointed store manager there (just a few weeks before my "joined" date to the left).
