I weigh the beans before grinding. Just for curiosity sake, once I weighed the ground coffee after grinding as well, just to see if I was getting any grounds retention in my grinder, and the weight came out exactly the same as before.
You can weigh the weight of whole or ground beans (assuming ground weight is same as whole beans...could just double check as mentioned above to make sure this is the case). That gives you dose. You can weigh the shot weight, and from these two values you can calculate extraction ratios. Ie: 15g dose and 30g shot = 50% extraction. You can weigh all other sorts of things in your kitchen too, like coffee cups, plates, saucers, carrots...sky is the limit. But don't know how helpful that would be for making espresso.

Just be sure to subtract the weight of your shot glass to give you the espresso only weight.
I used to weigh my beans then grind the the shot. Now I just let my vario weigh them in the basket and I tamp and go. I don't weigh the shot anymore. Once I knew the normal shot I was getting in the "normale" range I stopped doing that unless I am dialing in something new and the roaster gives me that info.
i.e. The bag or website says something like use 18g for a 38g shot.

As long as you subtract the weight one way or the other. I have to use a pen because my cheap scale turns off during the pull and I don't have an empty shot glass that is the same weight. It doesn't save the tare weight when it is off.
