It's better to work with brew ratio. Amount of espresso in volume is dependent on crema and not a good measure. Better to keep a brew ratio of around 50% which means 20gr of ground beans will give 40gr of espresso.
Brew ratio = (grams of ground coffee / grams of esprersso) * 100. For espresso 50% is commonly used.
