Subject: What exactly is a latte?
 

Is there a definition of a latte? Are there definite ratios of steamed milk, espresso and foam? I know that cappucino is supposed to be one third each of espresso, steamed milk, and foam. What is a latte?

Best practice is not to distinguish between milk and froth. This is a Starbucks irregularity. Try to get a very soft foam or liquid microfoam in the entire mug, with no separation between milk and foam. A cappa is a double espresso (2 ounces, and four ounces of milk). A latte at the best espresso places will be 2 ounces espresso and 10 ounces milk; although the proportions are more variable. However the 20 and 24 ounce stuff they sell at most chains is milk flavored with coffee, and no longer coffee garnished with milk.
