So are cans or jars with de-gassing valves on the lids OK (like these), as long as the air isn't being pumped/vacuumed out; or should I stick with my good old Mason jars?

Hi Kari!
I see no reason why not if you like them, but it looks to me that they'd be more of a pain to wash as you'd have to be more delicate around the valve area when washing out the jars., so as to not possibly damage the valve or the area where they're sealed to the acrylic top.
I'd just stick with the cheap tried & true, good ol' Mason Jars, IMO. {:-)
