You all better understand one thing!! I have a virtuoso grinder, its good not great and it clogs up on fine oily grinds. But I am happy with it. I roast my own coffee and I have actually missed a stone in a batch. Understand this if you miss one stone. Just ONE! ceramic grinders will shatter! So if you want to take that chance, well go for it! I have no doubt this will be awesome set of burrs but, a big BUTT check everything you stick in it. An I am sure it will clog like my virtuoso. A great grinder for drip and such but lousy for very, very fine due to chute issues, with oily coffee. Ceramic is the hardest next to diamond! Also will shatter not go dull! Do they give shatter protection?

There are some distinct differences between the heads of the Virtuoso and the new Vario as shown by the cutting heads. The burr blade angles are completely different. They appear to have been designed with just what you state in mind. Also, and owed to the undisclosed specifications that Baratza chose for the burr heads here is an interesting read on ceramic cutting tools: Cutting Tool Basics. There is no doubt that Baratza will include a warning about other objects being ground in the Vario other than coffee beans as being detrimental to the burrs, but they also look to have accommodated for such as mishap with the design of the burrs.
