It sort of sounds like they are trying to sell more things to make a good grinder better. Wouldn't the ceramic do everything except maybe French Press, if they are producing more fines?

Please search the site here on Vario bi-modal grind & there's also discussions & excellent charts on the Home Barista forums showing the output of the ceramic burred Vario as compared to two other top grinders., the Mahlkoenig Guatemala & Mahlkoenig (Ditting) Tanzania K805.

As far as whether the ceramic burr does a competent coarser grind, I'm completely AS happy with it for a coarser drip grind (almost Kosher salt) for the BraZen (when using the permanent gold filter) as I am with a comparable grind on my Preciso. I don't do french Press, so I can't help you there.

I just received my Vario-W yesterday and pretty excited to get started using it. I was looking to get some more information on calibration.
I followed the Baratza instructions, CG posts and youtube videos but needed to get some move advice. When I start the calibration with both levers at the bottom and I move the macro setting finer, it seems it to struggle or sounds like the burrs starting to touch at the 2-3 setting and the micro setting still at the coarse level. I've tried to change the adjustment screw to coarser but doesn't seem to help significantly.

James, first, make sure the adjustment tool is all the way up and secure in the hole. Run the grinder and turn as indicated to go coarser, I'd turn 2 complete revolutions. Are you now able to get the Macro up to 1 below the top with no motor strain? if so, you're nearly there. Go 2 more full revolutions, then raise the Macro to the top. Motor strain? If not, slowly raise the Micro. You should then hear some strain. If not, go the opposite way with the adjuster, maybe 1/2 revolution.
It could be that your grinder was adjusted to more greatly accommodate espresso. Occasionally these things happen.
One other thing you can do (if you've already ground some coffee) is to remove the upper and lower burr, and see if there is an accumulation of fines directly under the lower burr.

i have a fairly new vario-w and am unable to remove the top burrs for cleaning. it is difficult to get my fingers into the opening to get a firm grip on the upper burr to rotate it off, and i am unable to unscrew the upper burr more than ~ 1". any ideas? is this normal?
