I suspect that it was actually some sort of seasoning oil on your burrs, not cutting oil, as I think that cutting oil would not be good for your health.
Good point in regards to seasoning the burrs. I do have some mineral oil that I use for seasoning my cutting boards. I will definitely use them on the burrs. Thanks!

My personal view is that it isn't a big deal and no off flavors will be imparted to the coffee. I have replaced LOTS of burr sets and never washed/oiled any of them and have never had an issue at all.
That said, if you feel you must put some oil on them, only use enough to coat. When you are done, they should feel dry to the touch. No I would not worry about grinds or rice but if it makes you more comfortable, go ahead, you will not hurt anything.
