I am in the process of deciding on a large flat-burr grinder and came across the Fiorenzato Doge 83 mm flat burr currently on offer at 1st line. Yet there isn't much information about it on the web. I'd be interested in hearing about any user experiences with this grinder for home use and whether anyone has been able to convert it to stepless?

I have a Fiorenzato Doge 83mm that I purchased on sale from 1st-line. I find it works very well. I did customize it a fair bit. I single-dose with it and sweep it clean after each shot.
Here are the mods I made: - replaced the burrs with Mazzer Major burrs - cut down the hopper to be minimal - replaced the doser guts with a funnel - replaced the rocker switch with a toggle switch - made it stepless using a toothed ring and the worm gear adjuster from Macap.

This is very impressive! Since I am not nearly as skilled as you I bought a Mazzer Major, although I might consider your "funnel inside the doser" mod if I can get it to work.
