To the OP regardless of control mech I would skip the Jolly or Vario and go to a Major or K-30 or Koney or Robur or K-10 blah blah blah.
In fairness, grind retention MUST be mentioned with these larger grinders, often as much as 8 grams. (I owned several SJ's, and the doserless mod retained a significant amount which must be purged if more than 20 minutes transpires between grinding. Several years ago, I compared the SJ/Vario grinds and found them uncannily similar in profile, both showing the caramelly/chocolate-ish aspects more than the brighter fruits, as would a larger conical, or even a Preciso or manual grinder. The Vario-W, grinding by weight is awesome for consistency, especially for those of us used to a smaller basket, where a gram, or even 1/2 a gram can make a difference.
