Subject: Nuova Simonelli MCF Question---> ???
 

I purchased a used NS MCF a few years back to use with a La Pavoni Europiccola lever machine.  I recently replaced the burrs and noticed that they make the noise from making contact as "zeroed" before they produce a usable grind for my lever machine.  A friend in the coffee business was telling me that this is unusual and not good.  Is it possible they are aligned improperly from my installation?

My understanding, mostly from reading a thread over on HB, is that the beans go into the space between the two burrs, are coarsely ground there and then are ground again as they are pushed out between the edges.  If the edges are touching then how come the coffee is still coming out too coarse for my machine?

Thanks in advance for any and all thoughtful responses!  I am fairly mechanically inclined but am a little stumped by this situation.  The burrs are brand new and the installation is pretty straight forward.  The design of the grinder is also pretty obvious.  I seem to be missing something !?!
