Okay, if you're using soy, how do you change the steaming parameters to get microfoam? Stretch less, do the whirlpool thing longer, what? To what temperatures, as opposed to what you do with milk?

FWIW, my Whole Foods sometimes has hazelnut milk (Pacific maybe, I forget) - usually sold out. I grabbed it once when it was in stock and I was drinking drip, but wasn't impressed - it was thin and didn't taste hazelnutty at all to me. I might give steaming it a go, though. Definitely have to try steaming almond milk too, thanks for that tip! I use Soy Dream for now, and it's okay (Silk is FOUL imho), but will look for Pacific Soy. Is the "barista grade" different from their regular soy, or is it one and the same?

After much experimenting, I've settled upon a 50/50 mix of unsweetened soymilk and rice dream. I inquired to my family physician re the negative stories I've read about soy milk. She told me that unless I was intaking a concentrated amount, that drinking soy milk lattes daily was not only okay, but very beneficial.
My Quick Mill Anita expresso machine makes a good microfoam with the qbove mixture. I've found the ideal coffee, as well. The Boyers plant is located here in the Denver area and I go there to buy their "Spoon Bender." It is superior to any of the coffees that Starbucks offers, Sumatra or otherwise.

The barista grade seems to have a different fat ratio which aids in foaming and stability.
As for the steaming parameters, create foam by surfing the tip until 100 degrees then whirlpool but shut off Silvia at 130 degrees. If you hit or exceed 140 degrees you burn soy and it tastes freakin terrible.

Jasonian - I can and do truat my family physician a great deal because she is a new generation MD who believes in alternative medicine and keeps up-to-date. Also, I've discovered a lot of the so called research on the web is full of misinformation, because it is not the result of legitimate double blind studies.

I've made good caps with fresh whole goats milk. This goat milk didn't have a strong goat flavor, but the goat nuance was there in the finish. Very interesting. I know people who can't drink store bought cows milk, but can tolerate fresh goats milk, which is why I posted.

As I mentioned above, I mix Rice Dream (rice milk) & soy milk 50/50 and I get a flavorful milk that froths well. The rice milk tones down the earthy flavor of soy. Straight rice milk doesn't froth.
