Subject: Tips for etching with chocolate sauce
 

Hi All,

Any tips for etching with chocolate sauce? I'm using Monin chocolate sauce to do the etching. However in matter of seconds (25-30 seconds) the etching was smeared. Any tips to make the etching last longer? See the beak? when I did the beak there are quite a bit of the white foam showing up. The same thing happened with the whole think. It smeared so the line looks thicker. Any pointers how to make this better?

Hmm, that doesn't look like microfoam, maybe improving the texture of the milk will allow the design to last longer ?
