Most commercial companies sell a gas model. They are very popular in areas with unreliable power (south america/carribean/india/etc).
There is a different style pressure stat that connects to a gas regulator that functions in an on/off scenario (pilot light stays on of course) or a variable flow design.
You can convert many commercial espresso machines to gas models but it is not worth the hassle...just get a gas model since they are not as popular in the secondary market once they leave an area that requires it.
There are other issues with a lever in a high production environment but they can all be overcome with proper training.
