Thanks for everyone here helpt me, I finally got the BEZZERA STREGA from Italy to China. It was really a difficult process, you know China is a quite different place where are lots strange rules to forbid import. But with my effort I brought the machine from a agency of Bezzera in China. The price was within my afford. I am very satisfied with the machine. The strega pull a nice shot is very easy, the creama always enough and with a beautiful colour.
The only thing I haven't grasped is the steam of the machine. I thine the steam is too hot to frothing milk, Is there anyone can give me some advise for frothing milk by this machine? How long will you frothing it? I feel the milk has got too hot when the steam just about 10 seconds.
Thanks for helping. I am not good at English, so hope guys here can understand me.

I don't have a Strega, but here are my suggestions:

  1. Use extra cold milk.
  2. Use a tall glass. You can feel how hot your milk gets.
  3. Release some steam prior to frothing your milk.

Try posting @ the Home Barista Forum. I think they have a nice, long thread about the Strega.

Hi Yu:

I have a Strega, and have used it since last January.  I have to say that in all respects I an incredibly happy with the machine, and the quality of the shots it produces.  Especially, now that I am using coffee from Panther coffee, the results are amazing!!  I have now tried Panther's espresso, Colombian (SO), Brazilian (SO), Brazilian Peaberry (SO), El Salvadore (SO), and what is amazing is that there is not one that hasn't been remarkable!

I especially like the steaming capacity of the machine, and it does make great micro foam for latte art when used correctly.  First purge any condensation from the steam wand for about 3 seconds.  Then, immerse the steam wand well below the surface of the milk, and open the steam valve fully. Slowly lower the pitcher (i.e. raise the steam tip towards the surface) until the steam wand is immersed just below the surface of the the milk (in a cold pitcher) so that it just makes that "tearing" sound.  Introduce air into the milk in this manner for only 3-4 seconds!, then submerge the steam tip deeper, to produce a whirlpool until the pitcher is just a bit too hot to the touch to hold comfortably.  That's all there is to it!  Knock the bottom of the pitcher on the counter (if there any bubbles) and swirl...  then pour your drink!

Hello Rick,

Thx for your advise, now I have grasped the way to frothing milk. It was a small espresso machine I used before I got the Strega, It's quiet different between them. So it tooks me a time to learn. The steam of the Strega is really powerful and it can froth the milk quickly. Now I am very satisfied with it!!

The espresso pulled by Strega can be a quiet stationary of high quality. the two springs let me make the nice espresso easy. I have try a lot of kinds coffee beans. Some of them are espresso blent by Arabica and Robusta mix. and I also tried some single coffee beans, such as Kenya AA or some Honey Process for example Bali Island coffee. they all came out a nice whatever the taste or the creama. So I am happy with my choice of Strega and never regret.

Let enjoy the Bezzera Strega!
