so just rebuild a la peppina and am having some issues. I replaced all the gaskets and cleaned it out completely. when I fired it up and when I pulled shots the lever come up very fast, my shots are watery. There is water on the top of the puck no matter how hard I tamp it. Any advice?

Agree with above posts - also merits mentioning that the Peppina tends to produce goopy pucks. Even when I produce very slow (i.e., borderline stalled) pulls, there is always a bit of water on top of the puck when I remove the portafilter. On the flipside, there is usually also a nice layer of crema in the cup and the shots are delicious, so I don't really care that the puck isn't dry. But if it is running very fast, sounds like your grind is too coarse. La Peppina likes a rather fine grind compared to many other levers.
