Yes, I understand Chris' Coffee sells a $100 plumb-in kit.
Why, exactly, can't I just hook up a pressure regulator to my existing main line (to reduce the line pressure to ~5psi), then run a line from that to the line that's currently sitting inside the tank of my Expobar? Obviously I'd want to hook up a water softener and filter in series, but I'm failing to see what exactly makes Chris' install kit worth $100, when I could buy the parts I need from Home Depot for $20 or less.

By the time you price out two 10" filter canisters, the filter cartridges, the John Guest fittings, and the tubing you will find that it costs well over $20. That is about the price of one filter holder. If you can do it for $20, go for it.
