Hi Coffeegeeks,

We use a small espresso machine in our food truck t (it's a Breville, not the Roma but the next one up)
It's obviously a tiny home machine yet it surprisingly works very well for us most of the time since we don't do primarily coffee - and it doesn't draw that much power,
which is great since we're mobile.

In high-volume events, though , its limitations get very obvious, primarily in the steam department.
We're considering upgrading to a bigger machine, which will probably happen at some point in the future (I would LOVE a propane-fired machine...hard to come by)

In the meantime, I was just thinking today that what I really need is simply MORE STEAM, which brings me to my question:

Does such a machine as a steam-only dispenser exist? Has anybody every built one?

Just thought of asking people's advice here before I start reinventing the wheel

You can get stand-alone 'steam-toy' espresso makers that are no good for espresso but they come with steam wands.  The quality and ease of frothing milk with them varies from model to model.  I bought a Krups steam toy for $5 at a garage sale.  You can search craigslist and ebay for bellman 'moka pots' (called espresso makers) with steam wands.  I assume you want one that plugs in, not one the takes up space on your burners.  Here is such an example:

Make sure you include the term 'electric' in your search or you will get stovetop models, too.

This might be the sort of thing that you're looking for...but then again it may be overkill.  I don't know anything about these other than that they exist:

If you are going to spend that much on a steamer though...you're probably better off getting a whole different machine with adequate steam power in itself.  

Can you actually legally use that breville machine in a commercial setting?

I think we'll go for the better machine route, there's a couple of good ones on craigslist around here.

As for the legality of using the breville in a commercial setting, I don't know, but our unit is regularly inspected and they never even hinted at that :)

Look into La Spaziale mini Vivaldi II ...  It has solid steam performance and is NSF approved
