Subject: Rancilio S27 volumes and timing
 

I have some questions about the volumes and timing of my S27.  Your thoughts and comments are most appreciated.  Grazia.


I understand that the four dose buttons on the S27 (and similar Rancialio models) are volumetric.  In order, they work as follow:

Button 1 (one small shot), 40ml
Button 2 (one large shot), 50ml
Button 3 (two small shots), 100ml
Button 4 (two large shots), 155ml

QUESTION: are those proper volumes, or should I re-program them?

QUESTION: how long (assuming proper grind and tamping) should each take to pull a shot?

QUESTION: Which portafilter goes with which button?  The machine came with two porafilters (a single and a double). I presume that the single is for buttons 1 and 2, but you know what happened the last time I assumed something...

LASTLY: Please feel free to comment on the following text, quoted from the Rancilio S27 manual.  I find it rather problematic, given that there's no way all four of these buttons (and combinations of filters) will cause a shot (or shots) to pull for 25-30 seconds, assuming proper grind and tamping technique.

"The grinding of the cofee beans is of fundmental importance to the making of good cofee, and the granular texture of the resutiing grounds should be such that it takes 25-30 seconds to produce the beverage."

My Rancilio L7 (the S27's predecessor) also has 4 dosing buttons. I've got them configured for singles, double ristrettos, doubles, and triples at 1oz, 1.5oz, 2oz and 3oz liquid (30, 45, 60, 90 ml). "Proper" volume? Heck, set them to whatever you want. Program one button for a cooling flush, another for a portafilter rinse, or whatever is most convenient for you.

About 25 seconds.

Hmmm... I'm guessing you are talking about filter baskets (the little perforated cups that the coffee grounds go in), not portafilters (the handles and filter holders). I don't believe Rancilio makes different portafilters for singles and doubles. Use about 7gm coffee for a single, with about 1oz liquid (including crema) in the shot. Use about 14g coffee for a double, with about 2oz liquid in the shot. I'd recommend that you stop the shot when it starts to blond, regardless of whether you've reached the target volume. Operate the machine in "manual" mode (with the fifth button) until you get your grinding/dosing/tamping regimen established. (BTW - what did happen?)

This makes perfect sense. If your pour takes longer than 25sec, grind more coarsely. If it takes less than 25sec, grind finer. You will almost certainly need a different grind (as well as different amounts of coffee) for singles, doubles, and triples.
