Yes a VERY long dead thread. The water comes from the steam/boiler. Steam from the top of the boiler and hot water from the bottom. This is set at about 1.2 bar so there is plenty of heat there. Yes you can pull water from the brew circuit. I think the debate about "stale" water is over blown but you may disagree and that is fine.
I have no problem using the hot water tap, and in fact the more you use it, the less of an issue "stale" water will be.

It depends on what you need the hot water for. You can pull it from the brew head. But by design that water is not as hot as the water from the tap. It's too cold for making tea, for example.

I almost always just boil water in a kettle for tea. Having said that, I have drawn water from the tap without issue. I also have occasionally made a brand called redespresso. It is a rooibos that has been processed to be used in place of espresso in the basket. It does not present a huge variety like traditional tea, but it is pretty good for the occasional cup.
