After more than one year with my beloved Silvia and after trying all the Reverse Temperature mods I found, I figured out my own, just give it a try:
1- Turn your Silvia on, for about 20 to 30 minutes with the STEAM switch ON and the portafilter in place.
2- Grind your beans on the portafilter and tamp.
3- Turn the steam switch OFF, put a cup big enough to cover the brew head ( you do not want to burn your hand....). I usually put my Bodum 10 ounce cup for my cappa. If you want to shot a straight espresso, you can use that water to warm the espresso cup.
4- Turn the brew switch ON until you get about 1.5 to 2 ounces of water ( do not pay attention to the pilot light). Keep in mind that if you do not cover the brew head with the cup you are gonna have a lot of HOT steam coming out of the brew head...
5- As soon as possible attach the portafilter to the brew head, and just one second before you turn the brew switch on for your shot, turn the steam swith on, therefore, you will be ready to steam your milk right after you pull that creamy, sweet, brown and syrupy shot !!
I have found this method the most reliable to get very nice shots everytime. You will experience darker crema and sweeter shots.
