Is this the norm with others? When I say dry for the doubles, they knock out so dry and solid that I can pick them up and build coffee-ground houses out of them, using them as bricks. (Note  People who live in coffee-ground houses shouldn't spill water.) The pucks from my singles are very different. They routinely have a surface covering of water in the portafilter (not a lot but some) and don't knock out as a solid puck. Most comes out and a lot of residue remains that I rinse out.

While I'm not into puckology (a term coined by Jim Schulman) as a leading indicator of shot quality, I attribute soupy pucks to lots of head clearance.  The puck naturally expands once wet and if there is only 2mm of clearance between it and the grouphead, it ends up pretty darn tight with no room for excess water.  If however there is ample room, there's the opportunity for puddling after the pressure release, ergo no tight puck.

Here's an easy test: Place a dime on the top of the puck.  Lock in, remove.  Any impression?  Try a nickel.  Now do you see an impression?  Whether this matters in the cup is for you to judge... I hasten to add that I never use the single basket so I may be all wet (*groan*) on this one.  Maybe I'll experiment with it, just for fun.  :-)

Ah. Makes sense. Putting the nominally correct amount of coffee into my single basket - estimated at about 7-8 grams - results in a "below dispersion screen" fill. Hence space hence water. I'll see what happens with more coffee.

And Dan scores! Raised the coffee ground amount and puck is dry. With the Rituale's single basket this requires well over the nominal 7-8 grams for a single.

Taste? You mean you drink the dirty water? I just throw the stuff away - it's simply a necessary byproduct of producing pucks, isn't it? :-)
