I have a Saeco Via Veneto, which is very similar to yours, and just retired it yesterday. I never had good luck getting decent crema out of it either, but I'll second (sixth?) the motion regarding the grinder. I upgraded my grinder six months ago, and the improvement in my espresso's flavor was immediate and dramatic, even using the same grimy Saeco machine.
FYI, the *$ Estro Vapore is OEM'd from Saeco.
I don't do milk, so I can't help you with those questions; sorry.
PS and OT - I see you have started down the road to single-malt Scotch whisky. I approve of this lifestyle choice. Your palate will thank you, although your wallet won't. .
