I'm the proud owner of a new GC, and I'd like to adjust the pressure on mine. However, I haven't found anything in detail describing how to do it. Can anyone point me in the right direction?

Welcome to CG and Gaggia. A few suggestions to read. Basically, you are going to identify the top of the OPV, remove the return tube, open the top of the valve, turn the screw inside counterclockwise and measure pressure, or do it blindly about 3/4 turn, or turn and check return flow. fairly noted below.
