Having owned my izzo vivi for the past year or so, I've been going along pulling my reccomended 20 sec cooling flush before the shot and it's been relatively fine after adjusting the grind, tamp etc. however more recently I've been using an aeropress at work and experimenting with different brewing temperatures to see what difference it made. After seeing the results, I've now realised I'd love to be able to know what temperatures my espresso machine is brewing at and once gaining a better understanding of it, being able to adjust and tinker with temperature for a better result. Does anyone know if it is possible to install some kind of pid or gauge onto my machine?
Only been seriously into coffee for about 2 years and whilst visiting many artisan coffee shops and reading many forums, feel like I'm learning loads all of time. With everything I do, I like to try and perfect it so if someone could help me out I'd very much appreciate it! Thank you

The first thing to do is hie thee over to Home Barista and read Dan Kehn's How I Stopped Worrying and Learned to Love HXs. With the techniques from that article, a styrofoam cup, a stopwatch, and a halfway decent quick- or instant-read thermometer, you can get a handle on temperature.
You can also PID your HX machine - some folks swear by it, some claim it's a waste of your time and money. What you're buying when you PID your HX machine is tight control over the boiler temperature. You still have to do cooling flushes when you're not making back to back shots, though. Which means you'll still need to understand the timing of your flushes – they'll just provide more consistent temperature, since your boiler temp has a much narrower deadband. So don't toss out that timer, even if you do PID.

What I want is some sort of read out like they get with Eric's thermometer for the E-61 heads. There are threads on where they put a thermocoupler on a Musica and probably other machines at homebarista.com. That is what I would like on My HX machine.
