Ok, I am writing this mostly for other people that may have a ENA 4 and having issues. The community has been good to help me and hopefully this will help someone else who has some of the same issues I have. If you are like me, think that an old fashioned manual espresso makes the best coffee but you think you should be able to drink the coffee from an automatic, this thread might help you.
The problem I have been experiencing: Poor taste, bitter and weak. Adding more coffee or more water didn't help. Shot seemed best at 1oz normal flavor. Time to pour a shot was way too fast. I had the internal grinder set from fine to medium (tried both). I had adjusted the water anywhere from 1 to 3 ounces per shot and I had adjusted the flavor between normal and strong (this is how many grams of coffee are used for the shot). I also had tried normal water temperature and high water temperature. Tried three different roasts of beans, some of them very fresh. Out of all of this, I was not able to get the coffee to taste decent.
The machine/environment: About 10 months old. Bought it first of December of 2011. When I first bought it, I was sick and the medicine I was taking was causing everything I tasted to taste funny, so I finally gave up on drinking coffee from the machine when it was new and quit using it. I only used it a few weeks. This fall, just a couple of weeks ago, I fired it back up and started tyring to use it. I cleaned it all up, washed out the tank and put a new water filter in. I DID NOT run cleaner through the machine. Instead I just ran a bunch of coffee through the grinder and thought this would void the machine of old coffee grinds.
What I did: Called Jura. They told me the first thing to do was to put the grinder on the coarsest setting. I found this to be surprising since my shot time was already short. Actually, this made a lot of difference. The shot time is now longer, and the coffee is much better. The only way I can explain this is that maybe I was choking the machine a bit and there was an internal pressure switch that was cutting the pump off before the shot finished or something. This is purely hypothetical and one would assume if this was really the case they would send an error to the display to tell you. So my theory may be all hog wash, but I have never heard of a courser grind making the shot time longer. I actually felt that the grind on the finest setting was still pretty course, but I couldn't really say there was a lot of difference between the fine setting and the coarse setting.
Next Jura told me to clean the machine. Since I had ran very few cups of coffee through the machine and I had recently run all of the coffee through the grinder, I didn't think that cleaning could be an issue. Normally cleaning is supposed to be after 180 cups. Well, I had two cleaning tablets, so I cleaned it twice. I was surprised how much debris came out of the machine both times. My advice is to buy a large package of the cleaning tablets and use them whenever you feel like it. Maybe 180 cups is too long a stretch. Of course, the fact that I let the machine set a few months didn't help, evidently. But this did not make the biggest change it taste. Moving to the course ground made the biggest change in taste.
The coffee: Coffee is much better, and I am now finding that I am having to adjust my shots again because now that I have a lot of the bitterness gone, I am striving for a stronger coffee. So I am still adjusting, but I can tell the quality of the coffee is improved. I made some coffee last week that was pretty good, but then after that, the coffee was pretty bitter. I am assuming that I must of had the grinder pretty coarse for those few cups that were good because the grinder setting made a lot of different even though I didn't expect the coarsest setting to yield the best coffee.
Do I still want to go back to a traditional espresso machine? Yes.. I think I do.
