With a good grinder and a non-presurized portafilter, can the Starbucks Barista made by Saeco draw a good shot of espresso? Just installed an new pump and I took my portafilter apart and removed the presurized components. I own this same exact model: Click Here (www.ifixit.com)

It is in the grinder! I do not see what you are using or have in mind. The Baratza Preciso (refurb) is about the least expensive adequate grinder, unless you want to mod a grinder for fine steps or stepless.

The question properly stated is; 'Can I make a good shot of espresso with a Starbucks Barista Machine?' There is an important difference and you are in the position to answer the question.

The answer is yes, but you need, as you've stated, A) A decent grinder and B) a non-pressurized portafilter and tamper and C) coffee that is NOT from Starbucks as well :)
Seattle Coffee Gear has a great naked portafilter that I used before I upgraded:

SURE, it may be capable of producing a great shot! - but...*when*? - how often? My guess, accidentally. the stars would have to be aligned just so. I know of many small lightweight machines that only make strong coffee or over-extracted, astringent waste - in the most capable of hands. This one is made well enough to deliver espresso. Probably good enough - for the money. Be realistic in your expectations, though.
