The plastic plate helps stop splash back out ot the tray when/if you get a forceful release of the 3 way. I see that more with backflush that brew. I leave it out as it is just another piece to wash and fit back in.
Doubles are easier to make than singles, especially when you are getting used to the machine. Make doubles and waste half if you really only want a single, or use a non-pressurized single basket. You may have trouble switching back and forth.

Double shots are my standard espresso. It is easier for me to do and that is the normal shot strength you get here in the PNW. Some cafes have it posted at the bottom of the menu signs. So that is what I do. No idea about the plate in the water tray.
Buying advice: GRINDER GRINDER GRINDER. Don't cheap out on the grinder.
