Making the grinder stepless is fine and worth doing. However, the biggest retention hog is that useless doser. I just took it out and stuck a funnel in there to act as a chute. So much better.

I have the same Gaggia, I havent used it in years and just spent hours giving it a good cleaning inside and out. I have to get back in the groove, how many grams of bean are you using? I'm using 15 grams for a single and I cant get the holder to attach to the unit. I end up having to take some out and thats not fun.
