You can see my water dance at the start of the video. The water is all over the place then it settles down to one stream. It is only taking about 1.5 oz to do that now. Before it took 4-6. My coffee is tasting very good and very smooth. Use the blue jag I gave you.

Adjust the grinder, it might have gotten out of wack in the car.
This is what I do:
Grind beans and get milk pitcher out of freezer add milk and thermometer.
Stir beans in yogurt cup to fluff and pour into basket using yogurt funnel
Tap basket once remove funnel and level beans with cheese spreader
Tamp NSEW lightly and hard tamp in middle.
Water dance Lock and load hit timer and watch pour.
Steam milk and pour.
With the steam mod I might not have to freeze my pitchers any more. I was water dancing earlier to warm my cups and let the boiler rebound. It doesn't need that time now. When I get better I think I will be able to steam and pour at the same time. Right now I am too busy watching the pour. I expect that will change soon.

I readjusted the grinder after Sunday and had it nice and settled yesterday. It's today that it's being crappy. The only major change I made was putting some weird home-roasted beans through instead of my usual Panache stuff. I halved my flush from the start, as you suggested. Unfortunately, your Blue Jag ended up poured down the drain after a ten second geyser on Monday :(

Let the machine rest for about an hour, then tried again with my Panache peaberries. I followed your flush instructions from the video exactly. Got a much more normal shot with a decent cone and some good oozing action in roughly 30 secs. I'm always satisfied to know the problem is at the "handle" side of the PF and nothing to do with my equipment or settings.

I'm two for two! Tried the fussy Kona blend from this morning and stopped tamping like an idiot and got a fantastically delicious pull with a nice cone. It was slightly short at 25s, but still very tasty with a big 3/4" pillow of crema.

I just said this on another thread but I think it should be repeated here. For 6 hours of work and a little more than $100 in parts we have the equivalent of 2-3k dollar machine.

Did you get a chance to make the material list of the parts used for the mods (preferably with part numbers and where you got them)
I'm especially intrigued by the musica restricor mod and the steam lever mod.
Would y'all have been able to do the mods without the help of plindy? (I'm concerned that I'm not handy enough to do it on my own) I really don't want to screw something up.

Plindy did almost all the work, while we watched in awe and rapt fascination. I won't lie that, aside from his incredible experience and expertise, he has an arsenal of tools at his disposal which made the process go easier, as well as a lot of spare parts for almost every little snag. He was like a magician, pulling parts and tools out of his hat just when we thought we had run into an issue. Tapping the threads for the restrictors was actually not a very involved-looking process, provided you can get the group head off, the proper lube and tap.
