Ok after doing some more reseach, I have been upgraded to a budget of 2k or less
So that being said I think I will go with the Vario W grinder which gives me a pretty good budget for the machine
That being said what machines should I be looking at, mainly looking for reliable and the ability to create a great latte and espresso, for entertaining I would like to be able to crank out 4 shots relativly quickly if we are going to do affagato for dessert (just got a ice cream maker as well :))

I have an EC155, upgraded to a bottomless portafilter (new basket + hacked off the plastic handle).
I used it for two years without the mod, and with store-ground espresso. I then did the mod and got a Baratza Preciso the last few months and it made a noticeable difference. I recently made the grind size smaller after dealing with a bunch of tan/hay-colored crema, and now it's coming through much darker and with nice mottling.

Well done! You now actually have a number of good choices for decent hx machines. I would suggest you peruse some of the retail sites- Chris Coffee Service, First Line, Seattle Coffee Gear to name a few, and check out what's available in your price range. Then come back and search for posts on the machines you like the looks of. If plumb in is an option consider that, and consider your available outlet amps- 15 vs 20. There is also a machine or two that might be worth giving up the W version of the Vario for- like maybe a Quickmill- but that's just my personal taste and opinion talking.
