I think you would have been happier with the new QM Vetrano 2B . . . .

Italo2275 Said:

Yeah I think a bit of both. With the rocket it was really bad luck, with the duetto I think it is just getting use to the machine and setting the temps ok. As I mentioned in my post the R58 was easier to pull shots from as  I found the temp to be more stable. The iszzo I have lots test to do before I can get a good shot. But its getting better now. I still think that my grinder could not be grinding consistently,
Al in all if the r58 never made the noise I would have kept it.

Interesting.  I have to be honest, I have been researching non stop for a week and am sick of it.  Once I think I know which machine I want, I find another door to open.  I like the Duetto 3 and the Vivaldo II and will more than likely pick one of these.  I don't know how much I will use steam, and can probably get away with the Giotto Evo V2 (LOVE the looks and it's a bit smaller than the Duetto 3) but why not spend $200 more for a  DB system? Maybe I can use that $200 towards a better grinder? Longevity of a DB better than the Evo V2?  So as you can see, I still am searching.  I'm sue the Vivaldo II would be great but would like to plum it later and it's not an option.  Of course, the size of the water tank is nice, and easier to access for a machine placed under cabinets.  I could care less about the portafilter size.  Using a bottom less would not matter much to me.

It tasted good not perfect yet, still just a tad bitter at the end so I might have to lower the temp. I still have the pump Pressure set to 9.5 so I might try to turn it down abit.
Actually I never changed the offset at all, what I did is put in your PID settings and play with the temps and match the coffee. With the same coffee I went as low as 196 and it tasted sower so i raised it till it tasted good.
But Yes!!! thanks Dave I know I ask lots of questions but I am seeing the results.
