As Susan noted the boiler and brewstat is the same as Classic and same deadband and of equal stability or instability. Steam is probably faster on the twin with the thermoblock. I say probably because I can get to steam fairly fast. I use a PID on the Classic and add heat with brew via alarm, and steam control with alarm control 2. That can give intrashot stability, and since heat was already added, getting to steam is a bit faster than standard Classic.
