I'm getting very close to pulling the trigger on a Giotto Evo, and was wondering what the likelihood of V3 models being imminent are? How long did it take for the V2 machines to come out after the V1's were issued?

The V1 machines were out several years before the V2 version was released last year. The V2 machines added several improvements to the Evo, including boiler insulation, quieter rotary pump installation and a stronger frame. This addressed many long standing customer requests. I wouldn't expect to see a V3 for several more years.

A Rocket machine is a long term investment and you'll enjoy the machine for many years. Any minor updates Rocket makes would likely be retrofittable into any recent machine. You can also take advantage of new products for E-61 machines that become available.
In the 2 years I've had my Evo, I've added Rocket's stainless steel cup rail, the precision portafilter basket from VST and the precision shower screen from Chris Coffee. So, I feel my machine is up-to-date with the latest improvements.
