(You can pull great shots with a Gaggia and Rocky but not with the cheap "burr" mill and a Silvia - Ya know?)

That seems to be a recurring theme: Get 'em immediately upon roasting - either self- or local- roasted (or quick-shipped like Peet's) - and use 'em in a week or, at most, two. I originally was motivated to save money on shipping and was buying two pounds at a time from Peet's, freezing one, but I'm coming around to the thinkng that I'm probably lessening my enjoyment to save a few dollars. Clearly, with multi-thousand dollar home espresso machines and grinders that run $500, this is not a endeavor that lends itself to pinching pennies.

The good news is that home-roasting is a lot cheaper (& better) than paying $12+ / pound for coffee that's not all that fresh. My cost per pound (including shipping) was around $7 from Sweet Marias - not a very large order either.

You should not be grinding a whole hopper of beans unless you plan on using a whole hopper of beans immediately. Once coffee is ground it starts going stale immediately. You should be grinding one drink at a time (single or double), and preparing that drink. I weigh my beans on a digital scale, grind, and immediately extract them. The only time beans ever go into my hopper is if I am entertaining and making a lot of drinks. At that point I let the doser do its job and measure the quantity for each shot.
