How do I pull a ristretto on an Astoria Gloria SAE2 using a Mahlkoenig k30es grinder?

It's the same on any automatic/semi-automatic machine.  You'll want to use anywhere from 14 to 21 grams of coffee, depending on the taste profile you're going for.  Adjust the grinder so you get about 30-45 ml (1-1.5 oz) in 25 to 30 seconds.
