Subject: Which Soy Do You Like?
 

Someone asked me today about soy milk and since I really don't know much about it, I thought I would turn to the CG crowd for your thoughts.

What Soy Milk do you recommend and why?  Can you froth/foam with soy milk?  Are there any special techniques or considerations when frothing?  Should one go with the Natural flavor or the Vanilla flavor?

I really don't know much about soy milk other than the fact that I can enjoy drinking 8th Continent Chocolate Soy Milk and that Starbucks has their own version of Silk.

Any help will be greatly appreciated!

Soy Dream does nice... better than Silk IMHO, but I fell in love with Soy Milk because of Silk and I am known to one of the boxed soys....

8th Continent is a bit too sweet for me, but then so is Silk.  I have a soy milk maker & often cut Silk with homemade soymilk or just use the homemade.  For drinking, I most always use the vanilla flavor.  I've not mastered frothing it, yet, so despite the need to eliminate dairy (allergies/asthma - dairy is mucous producing), I still normally use moo milk for lattes/'chinos, since I only have about 5/week.  Also, Silk makes a creamer, so sometimes I'll just add it to an Americano or drip or vac pot coffee.

FYI... the article Got Lactaid? informally rates some milk alternatives (caveat: it's more a cookie-dunking runoff than for espresso).

I am all about unsweetened, nothing added 'cept maybe vanilla. Better to do that and add a good sweetener like lehua or canadian rush honey or your favorite sugar, molasses or chocolate, etc.. Most soymilk is full of junk. It might make for good taste, but it makes me feel gooey.

I only get mixed results steaming, but have only tried a dozen times or something, and my customer (my wife) only wants heat for the milk anyway. I do cold half & half/no sweetener with my french 2 ozers. Wierd, I know, but. Yum.

I use Silk Vanilla when I need a non dairy cappa.  I can get decent foam with it, though I wouldn't call it microfoam.  I like the flavor of Silk better than other brands I've tried.  Some are downright awful.  OT:  If you need a soy yogurt, Silk also makes a good one.

Does anyone have any comments on different Rice Milks? I have various allergies to both soy and dairy products; they are not life threatening, but I try to avoid them whenever possible.

I have found thar Vanilla Rice Dream is downright awesome for iced lattes... ten times better than any soy milk I have tried. Perhaps even better than real milk iced lattes, but it has been so long that my judgement may be clouded. Unfortunately, the taste of steamed Rice Dream is not good at all, not to mention that it is very thin.

Right now I am sticking w/ straight espresso, americanos (hot/iced), and the occasional rice-milk iced latte.

We use pacific soy and it really seems to work great for us.  We can usually do latte art with it, and the microfoam ends up really nice.
As far as special techniques, just make sure that you don't scald the soy... it seems a little more sensitive than moo milk.

Should one go with the Natural flavor or the Vanilla flavor?

We use the plain soy, but maybe it would be cool to offer vanilla soy when someone wants a vanilla latte with soy.... just a thought.
