Subject: No "woosh" on the Illy can!
 

Just opened my first can of Illy beans and was surprised there was no "woosh" sound indicating a vacuum pack.  Does this mean the gas had leaked out and the can was not as fresh as it should/could be?  First shots pulled long and were so so.  Just getting started on this bean though so hopefully it will improve.  Was wondering about freshness however.

I was under the impression that Illy cans were nitrogen flushed. Thus you'd never hear a whoosh as there's no vacuum to cause it. As long as there's no oxygen the beans should be happy.

I have experienced the same thing.  It seems if you buy the pre-ground Illys the top of the can will actually be bulging somewhat.  When this can is opened there will be a noticable woosh of "air" out of the can because it is not a vacume but under preasure.  However, with the actual Illys beans this does not happen.  At first I thought there was something wrong but every can I have used does the same thing.

Just opened my first can of Illy whole bean today, same thing, no whoosh.  So I knew it was common, not a problem.

Another data point but not a definitive answer: I have bought a lot of cans of Illy whole beans in the last 2 years and the vast majority of the cans make the sound when opening, but the occasional can doesn't.  I always figured that the no-sound cans had gone bad.

Here's a hypothesis:

You want the coffee particles to be surrounded by nitrogen.  You don't want little pockets where oxygen could hide.  With whole beans, the "particles" are bean sized and the gaps between them are huge, so just filling the can at about atmospheric pressure will allow the nitrogen to totally infiltrate the can & its contents.  Thus  no "whoosh".
With pre-ground coffee, the particles are tiny, as are the gaps.  You thus need much higher prssures to make sure the can & its contents have been totally flushed and all the evil oxygen displaced.  Thus, "whoosh".
