apologies in advance for silly questions but I've searched the forum for this topic but can't find any answers.
The general consensus here is (with slight variations)
single shot: 7grams giving 1-1.5oz over 25 secs double shot: 14-15 grams giving 2-3 oz over 25 secs
Now, my question is: How do you measure out 7 grams? do you weigh it out? do you just assume that the measuring spoon supplied with the machine measures out 7 grams? if so is it a heaped spoonful, or level?

Well it is a weight of the dose. Measured with a scale...like drug dealers use. From a cheap hang scale...to a more expensive digital scale. They sell them at many of the coffee equipment sites...like Chris Coffee...heres a link to Chris Coffee service showing a nice digital one for $75US click here. I'm sure you could buy one there as well, probably even retail around town. Once you establish grind adjustment-to-weight, then you could use proportion as a measurment...this is pretty much what you do if you have a grinder with an adjustable doser. I'm not a stalk-raving-mad-scientist-full-blown-aficionado-coffeegeek yet....yet. So others may chime in with better knowledge and their definition of a correct weighted dose-per-shot recommendations. There always seems to be another variable...like blend type, dark or light roast, humidity, etc. or even as another_jim puts it "the butterflies in brazil" that I don't know about. I'm still using the "that's about enough" method. Hope this helps a little.
I use a 0.1g accuracy scale but that's overkill. A level scoop of beans will be darn close to 7 grams precisely. Loose grinds in the double basket amount to 14-16 grams, depending on the basket and grinder (e.g., the Mazzer Mini's grinds are more "fluffy" than Rocky). The more important issue is consistency rather than an absolute weight.
Hi Mic... Just fill the basket (single or double) with beans, and then grind & tamp them. Most beans will come really close to the correct amount for your machine, and it is nearly as accurate as weighing. If it is a little quick, you could add a few more beans. Once you figure it out, it won't change much.
With the Silvia I used to slightly heap the grounds before tamping, for the Expobar, I fill it level with grounds.
If it's only for espresso, you can get by with a 120g / 0.1g accuracy scale for less than $30 on eBay. Search on "digital scales". There is also a plethora of websites specializing in them. The thread Which Scale? has other suggestions.
