Hope not to make an irrelevant topic. I just got this cup, took 43 seconds for 1,75oz. Is this too long time? Depnding on the blend, that is usually my average time/volume, sometimes less īcouse early blonding. This was a good shot, not blonding untill 40 seconds; and it was good for all the flavours inside it. Just to share something of mine with you...

The conventional wisdom is that yes that is too long.  That said - how did it taste compared to a 25-30 second pull?  Technically speaking it should taste a little more bitter with the longer pull as the coffee gets heated for a longer period of time.

My espresso got better when I put away the timer and followed my tongue.  For triples my shots run around 40-seconds but they taste great.

Taste your espresso!  Like it?  Then you did it right.

I really like this 1 minute triple, Tim! I usually stop the pull when the blonding begins; I think I'll let it go a little longer to see the difference.

Yes, I know itīs not the conventional time. But I also know what Tim says: the taste is what matter. I liked this shot because all the falvours I could taste in it, flavours that I canīt describe. I think espresso itīs quite a "complex" drink, and that taht also gives you the possiblity to discover it everytime...

Tim I know, iīve seen, your shots!! Do you use a trilpe basket? whats the volume? is that a triple shot or triple ristreto shot?

Yes its a triple basket and between my camera and the poor lighting the shot does look like it blonds early in the video.  Oddly the shot looked much better in person and tasted great.  My triples seem to run forever before going blond and that's just fine with me!  Typical volume is around 2-ounces I think (I don't really measure them and my glass isn't clear).

My good shots look like your initial pic and also run a bit long (vs. tradition) but I love the taste far better than a 25 sec shot.  I guess I like them strong and bitter (to me anything tates better than under-extracted, which to my palate is not very nice).  I do find myself doing a backflush (with water) more often as I don't know how these impact the 3-way valve (I also use cafiza and backflush as part of a monthly or so routine).
