Subject: Is Tamping Needed for a Pressurized Filter
 

I am using a Spidem Trevi Combi Plus which has the pressurized portafilter system.  Near as I can tell, it delivers a perfect shot almost every time, no bitterness with good crema.  I have a tamper, but I just use that to knock the coffee into the filter and smooth out the top for an even flow through the puck.

Should I be applying pressure to the coffee grounds?  Should I NOT be tamping a pressurized filter?

My experience with a pressurized filter basket is that the need for tamping varies a lot with the  particular beans & grind being used.  I don't (yet) have a grinder so I've been using pre-ground.  With Illy medium roast espresso grind, anything more than a light pat would choke the machine or create an undrinkable dogshot.  The Illy dark could take a bit more tamping, LaVazza even more.

My current favorite is Peet's Major Dickerson's blend, ground to a "5" on their commercial machine.  This makes some really good espresso, but requires some fairly heavy tamping (though I doubt I'm up to the 30 lb. that everyone talks about).

Experiment!

If you are getting a perfect shot - don't change a thing!!!!

If you want to see if you can improve your already good shot, change one thing at a time. Make small changes in grind  and tamp pressure. Keep notes.

Coffee is a subjective experience. If it tastes best to you when you chew on a bean, don't let anyone talk you into using water ;-)).
